Mito is a ham that comes from the carefully selected meat of national pigs, all with a live weight of at least 160 kg. It is a product with an extremely delicate flavour: a delicacy obtained thanks to an initial salting skilfully limited. Minimum maturation 14 months.

The Amatriciana PGI ham boasts a specific quality that derives from the traditional, particularly high-quality trimming technique. This operation, which characterizes this product, derives from the centuries-old experience gained by the producers in the area and gives the ham a rounded “pear” shape.
