Valfrutta medium peas come from the fields in Emilia Romagna, Lombardy and Veneto where the climatic and environmental conditions are optimal. Cultivated with integrated production to reduce the environmental impact, because we believe that working responsibly and offering excellent products is the most important thing.

Cod tartare on pea cream with mint

Ingredients

1 pack of Valfrutta peas 410 g , 300 g of soaked cod, 1 teaspoon of green olive paté, 50 g of spreadable cheese , 1 sprig of mint, extra virgin olive oil , pepper .

Preparation

1- Using a sharp knife, cut the soaked cod into small cubes, transfer to a bowl and season with a drizzle of oil, the green olive paté and a pinch of pepper (remember not to salt the cod: it doesn't need it!).

2- Drain the peas and place them in the blender, add the mint and cheese, a pinch of pepper and blend until you obtain a cream.

3- Arrange the cod tartare on the bottom of 4 low bowls, fill with the pea cream and refrigerate.

4- When ready to serve, use a knife to separate the cream from the sides of the bowl and turn out onto plates.
