Description
The Trappist beer from Orval Abbey has a truly unique style.
From the choice of malts (three different varieties are used), to the types of hops used, to the particular cultures of native yeasts, nothing is left to chance.
The goal is Le Goût d'Orval, which is reached with three fermentations, the last of which takes place in the bottle, giving rise to a deposit rich in B vitamins (natural refermentation in the bottle).
Rosy in color with orange reflections, it has a good-sized and persistent white head of foam.
The nose shows hints of citrus (sweet orange) and ripe fruit in particular plums and white plums.
There are also vegetal fragrances; there is also something floral, light spicy hints (pepper and cinnamon) and immediately one begins to feel the action of Brettanomycetes yeasts (Brettanomyches) that bestow earthy and finely acidic tones.
The flavor is extremely complex with a thousand shades. An immediately bitter hop-like opening, quite rustic, earthy and finely acidic, followed by more fruity and citrus notes (lemon peel).
There is a malty base (biscuit) and an alcoholic note that warms the palate at the end of the stroke. It is rich in vegetal tones, with a background of rhubarb, cinnamon, cinchona and a touch of licorice.
The dry and persistent aftertaste is due to the "dry-hopping" process which involves the use of fresh hop flowers placed in the fermentation vats.
In summary: a masterpiece.
