The Coppa di Testa Ettore Mancini is a unique specialty of its kind, typical of central Italy. It is prepared using lean meat obtained from the head, neck and cheek of the pig.The mixture is coarsely ground, cooked and then placed in a characteristic jute sack. It is eaten sliced or diced. Sweet taste, soft consistency, it is suitable for appetizers or as an accompaniment to bread, bruschetta or traditional products such as tigelle, fried gnocco and piadina .
