Val Liona is made in the heart of the valley of the same name, an area with a unique microclimate located among the green slopes of the Berici Hills, which since the year 1000 has been the cradle of expert pig breeders and master craftsmen in the processing of seasoned thighs. Taking up the ancient recipe handed down for generations, we can now offer the original Val Liona - seasoned boneless pork leg - sweet or smoked, starting exclusively from pork legs with the right proportion between lean and fat. These are freshly boned and enhanced in flavor and aroma through a mixture of sea salt and natural flavors. The healthy air of the valley and its particular climate do the rest, giving us, at the end of the seasoning, a special product, with a sweet and unmistakable aroma. The smoked version is very refined, embellished with selected spices.
The most classic of rolled pancettas without rind: it is obtained from the fatty part of the pig which, once trimmed, is salted, left to rest, massaged and, finally, rolled up on itself. It is precisely this phase, which brings the fatty part to the outside, that gives the product a tasty taste and a soft consistency. The minimum seasoning is 60 days, always in the Ibis cellars of Busseto. The finished product is in a net to ensure ease of service.
