The hand-picked grapes undergo the removal and pressing of the stem before fermentation, at a controlled temperature, with maceration on the skins in order to extract the best components. Adding alcohol to the wine at the ideal moment establishes the balance between the body and the bouquet of the wine. This moment is chosen by the oenologist following a rigorous control of the fermentation temperatures and densities, the latter depending on the vine variety, the stage of maturation and the required final sweetness.
