CENTINARI FRANCIACORTA BRUT DOCG CL.75

Produced from 100% Chardonnay grapes grown in soils of morainic origin between the areas of Erbusco, Adro, Cazzago, Gussago. The soft squeezing in a lung press preserves its organoleptic qualities in a grape juice that passes a first and a second selection. Fermentation at a controlled temperature of 14 degrees allows it to express all its aromas and scents. It has a vibrant, incisive and vital character. The scent is fresh, decisive and spicy, rich in yeast fragrance. In the mouth it is well balanced and structured with good flavor and freshness.

The harvest is done by hand, the bunches are placed in small boxes to be brought whole to the soft pressing. In this way the organoleptic qualities of the product are kept unaltered and are best expressed. The time factor is also fundamental, because the natural refermentation takes place in the bottle, and the subsequent slow maturation and refinement on the lees are never less than 18 months.
