Description

Franciacorta Rosé Brut Ricci Cubastro

Rosè Franciacorta

Grapes: Pinot Noir 80%, Chardonnay 20%.

Vineyards: the Pinot Noir comes entirely from the Bosco Basso vineyard in Capriolo, the Chardonnay from various vineyards in Capriolo and Iseo.

Production cycle: the Pinot Noir undergoes a brief stop in the press in contact with the skins to extract the necessary color, then follows the fermentation in the steel tank and, in the spring, the tirage with the beginning of a slow refermentation in the bottle according to the traditional method of Franciacorta. The bottles remain in the stack for at least two years. After disgorgement with the addition of an extremely dry liqueur, it undergoes further aging in the cellar for a few months. The total maturation period is therefore at least 36 months.

Tasting notes

Colour: salmon pink, fine foam with a nice collar, persistent; bubbles, fine and brilliant. Bouquet: fragrances of ripe black cherries and jujubes, wild berries and mountain herbs, scents of roses. Flavour: rigorous taste and strong character, the impetuous freshness is soon tamed by a clear and imposing body, fruity and fragrant. Alcohol content: 12.5% vol. Storage of the bottles: laid down, in the dark, in a dry and cool place. Service: serve at 7-8° C, preferably in a bucket with water and ice, uncorking the bottle at the time of serving and using slender and not too narrow glasses. Gastronomy: gritty and persistent, but at the same time fresh and elegant; it is the Don Giovanni of Franciacorta that goes well with all foods: from delicate to spicy, from fish to meat, from cured meats to cheeses, its charm conquers.
