Description
For the Old Tom, the Citadelle Réserve is aged in barrels for three months together with the special sugar. In the end it all comes together.
The result is a gin with breathtaking aromas and an alcohol content of 46% Vol.
In the glass, Citadelle No Mistake Old Tom Gin comes in a pale gold. The nose reveals fresh and powerful aromas, accompanied by notes of juniper, orange peel and cardamom.
The scent then changes into more floral nuances with notes of jasmine and fennel. On the palate, Old Tom is full-bodied and elegant with a bittersweet profile of lemon zest, anise and almond.
On the palate you can savor acute notes of nutmeg, cinnamon and diced pepper.
The finish is pleasantly long with floral, spicy and woody notes, in particular traces of coriander, angelica, violet, cumin and licorice will remain on the tongue.
Citadelle No Mistake Old Tom Gin takes its name from Old Tom Gin's nickname, "No Mistake", which was once given to it by writer Charles Dickens.
Therefore, Citadelle Gin pays tribute to Dickens with their Old Tom Gin.
Responsible for the production of the special gin is Alexandre Gabriel. The biggest challenge in the beginning was to get the right gin base and give it the flavor as it was drunk in the 19th century.
Gabriel often traveled to the Caribbean, on one of the trips he discovered for himself an excellent cane sugar, which was similar to Demerara: moist and heavy.
He quickly realized that this sugar was the missing ingredient for his Old Tom Gin. The sugar is roasted in copper kettles to be caramelized, then diluted and then fortified.
