Description
Santa Ana Gin is produced via partial vacuum distillation, a technique mastered in the Charente region of France.
This technique allows a concentration of botanical aromas to be extracted without degradation by heat.
The finer scents are extracted with vacuum distillation, which strengthen and become more complex towards the end of the distillation.
The result of the process is a fragrant and delicious gin that uses even the most sensitive botanicals, such as Ylang-Ylang or Calamansi.
Tasting Notes :
For Santa Ana, I started with some basic gin classics - juniper, coriander, lemon, bitter orange, angelica root, and iris root.
and I added the scented qualities of Ylang-Ylang, Alpinia and Fennel along with the sweet citrus notes of Calamansi and Dalandan.
