The anchovy that CONSORCIO prepares starts from a preliminary selection of anchovies from the Cantabrian Sea. Fishing takes place in spring when the anchovies approach the coast to spawn. Once they reach the port, they are selected based on freshness and size.

Sweet, creamy bread and anchovies

INGREDIENTS:

Butter ,Sugar , Eggs,Honey , Flour , Yeast , Cream , Spreadable cheese , Gelatin , Egg whites, Cantabrian anchovy from the Consorcio.

PREPARATION:
  1. We beat butter and sugar in a container and set it aside.
  2. In another container, beat eggs, sugar and honey.
  3. Slowly add the contents of the previous container and mix with flour and yeast.
  4. Transfer the mixture into a mold and bake for 30 minutes at 180º to make the bread.
  5. Next, add the cream, quesuco and a sheet of gelatin to a pan. Continue mixing until you get a smooth and creamy mixture. Then, in a container we will use the cream and beat to assemble until it is firm. On the other hand, we will also whip the egg whites and mix everything together with the quesuco preparation.
  6. Finally we plated the sweet bread, the creamy mixture and an anchovy.
