Description
The production of split artichokes in oil derives from an ancient traction of our municipality of Priverno and was a very practiced processing and production activity. Their quality derives from the use of exclusively local products and the traditional artichoke processing and processing technique. The processing of the product takes place with the addition of wine vinegar, salt and spices, to increase the organoleptic characteristics of the product. Calibrated artichokes by eliminating the outer leaves to reach the most tender and small part with a soft consistency.
