Mito is a ham that comes from the carefully selected meat of national pigs, all with a live weight of at least 160 kg. It is a product with an extremely delicate flavour: a delicacy obtained thanks to an initial salting that is expertly limited. Mito is then aged in an ideal environment for over 14 months, at the end of which it is subjected to a final refining period achieved by exploiting the particular microclimatic characteristics of ventilation and temperature that characterise the Alta Valle del Tronto. All the stages of the processing of this ham naturally follow the centuries-old traditions of Amatriciana pork butchery.
