Snails with saffron and smoked bacon
Ingredients for 4 people: 400g of snails, 150g of smoked bacon in a single piece, 200g of cooking cream , 50g of grated parmesan , 1 glass of meat broth , 2 sachets of saffron , salt , pepper .
Preparation:
Bring the water to boil for the pasta.
Cut 4 thin slices of bacon and then cut the rest into cubes.
Toast the bacon slices for 5 minutes and set them aside on kitchen paper then brown the diced bacon in the same pan for 7/8 minutes over a low heat.
Cook the pasta.
In a large pan, heat the cream with the broth and saffron for about 10 minutes over a low heat, until it thickens a little.
When the pasta is cooked, pour it into the pan with the sauce and over a low heat, add the diced bacon and mix well, turn off the heat and add the parmesan, mixing well.
Serve decorated with slices of toasted bacon and a sprinkling of pepper.
