Millerighe with Four Cheeses

Four cheeses, four different stories meet in the four signature cheeses millerighe:

- Whip the ricotta with half the milk until creamy and season with flakes of pecorino.

- Make a fondue with the remaining milk and butter

- Bring to the boil and add the pecorino and ricotta

- Drain the millerighe al dente and sauté them in the cheese cream

Ingredients:

250 g of Millerighe Giuseppe Cocco

200 g of Ricotta

Black Pepper

Salt

30 g of canestrato Pecorino

1 glass of fresh milk

Butter

It was 1916 when Domenico Cocco began working in a pasta factory and he was only 14 years old. Over the years, work turned into a passion. The young man learned the techniques and tricks of this art so quickly from the elderly “Mastri” pasta makers that after a short time he too was called “Mastro Domenico”. He dedicated his life to this fascinating profession, he guarded all its secrets which, over time, he revealed to his son Giuseppe just as the elders had done with him.
