Nestled between the Apuan Alps and the Tuscan-Emilian Apennines, Garfagnana is an area that has remained intact over the years, where ancient mountain traditions are still alive. After an initial, brief maturing period in the dairy, Pecorino Metello is transferred to Metello, the village of origin of our grandparents, a mountain village at an altitude of 1,000 metres, where our maturing cellar, "Tuada" in Garfagnana dialect, is located. Once the maturing process has been completed, in totally natural conditions, the pecorino cheese is covered with chestnut husks, which, as well as characterising the rind, strongly recall the scents and flavours of the chestnut woods of the Tuscan-Emilian Apennines.
