The processing of the ragù is meticulous and artisanal, thus obtaining products as good as those made at home.
This sauce is excellent for dressing Carrù egg Tagliatelle but also for a plate of short pasta such as the classic Rigatoni di Gragnano IGP or Colored Pasta. For perfect use, bring the sauce to a saucepan over medium heat, add a few tablespoons of water during cooking, sauté the pasta in the pan, add a drizzle of raw extra virgin olive oil and parmesan if desired.
