"Every moment is right to drink Barolo". And if those from Borgogno say it, there is no doubt that they are to be believed. After all, this is the most historic cellar in Barolo, dating back to 1761. Even today, the underground cellars represent a rare historical memory of the Langa, where the wines are produced according to tradition, with long spontaneous fermentations without the use of selected yeasts in cement tanks , and above all with long refinements rigorously in large Slavonian oak barrels. Borgogno cultivates its own vineyards in Barolo, Madonna di Como, and in the Colli Tortonesi.
After the harvest in our five historic vineyards in the municipality of Barolo, the grapes are destemmed and pressed in the cellar. Spontaneous fermentation follows in large cement tanks, at a temperature between 22° and 28° for about 15 days. Submerged cap maceration also takes place in cement for 20 days, at which time the malolactic fermentation also takes place. The wine is decanted into large Slavonian oak barrels where it will age for about 3 years. Following passage in cement and subsequent bottling.
