Villa Sandi Montello and Colli Asolani Corpore Merlot
Produced with Merlot grapes, on the Villa Sandi Estate, in the Montello and Colli Asolani DOCG area
VINIFICATION
The destemmed and softly pressed grapes were introduced into the winemakers where a maceration of the must took place in contact with the skins for 15 days at a controlled temperature of 28-30°C.
During this phase 5 daily punching downs were carried out in order to extract the color and tannins from the skins.
In this period the wine completed its alcoholic fermentation, then it was placed in French oak barriques (Allier) where it completed its spontaneous malolactic fermentation by the end of the year.
After 12 months of aging in barriques, the wine was bottled.
Only after at least 12 months of aging in the bottle is Còrpore ready to be tasted.
