This soy sauce is Gen'en style, healthier as it contains less salt (43%) and an alternative to the popular koikuchi. However, this sauce is not only used as it is more attentive to health; the smaller quantity of salt makes it more delicate than koikuchi and therefore preferable to this when you want to make the original taste of the ingredients feel more clearly or when you want to cook tasty but softer than with normal sauce.
