Ingredients : 320 g of large Molisana spaghetti , 3 cloves of garlic, finely sliced, 50 ml of extra virgin olive oil , 2 tablespoons of Pavone chili pepper, 1 tablespoon of fresh parsley, chopped, Salt qb , Pecorino or Parmesan Reggiano , grated, 1 anchovy
Instructions
1) Cook the Pasta: Bring salted water to the boil in a pan and cook the spaghetti al dente. Set aside some cooking water.
2) Prepare the Flavored Oil: Heat the extra virgin olive oil in a pan over medium-low heat. Add the sliced garlic (and anchovy if using) and cook until the garlic is golden brown. Add the Pavone chili pepper threads and mix.
3) Combine the Ingredients: Add the drained spaghetti to the pan with the flavored oil. Mix well, adding a little of the cooking water to create a light sauce.
4) Seasoning and Service: Add the chopped parsley and lemon zest (if using). Mix, add salt, and serve immediately. Garnish with grated pecorino or parmesan to taste.
