This product, obtained through the aging and fermentation of common garlic in environments with controlled temperature and humidity, offers a sweet texture and unique softness. Risotto with Black Garlic and Porcini Mushrooms.
Ingredients : 320 g of Carnaroli rice , 20 g of granular black garlic, 200 g of fresh porcini mushrooms (or 20 g of dried porcini mushrooms), 1 liter of vegetable broth , 1 small onion, finely chopped, 50 g of butter , 50g of grated parmigiano reggiano , 2 tablespoons of extra virgin olive oil , 100 ml of dry white wine , salt and pepper qb , parsley , (for garnish).
Instructions :
1) Mushroom Preparation: Fresh Mushrooms, Clean and slice thinly.
Dried Mushrooms, Soak in hot water for 20 minutes, then drain.
2)Heat the oil and half the butter in a pan. Add the onion and sauté until golden.
3) Add the rice and toast it for 2-3 minutes. Deglaze with white wine.
4) Add the mushrooms and granular black garlic. Cook adding hot broth one ladle at a time for 18-20 minutes, stirring until the rice is al dente.
5)Turn off the heat and add the rest of the butter and the parmigiano.Mescolare Mix until you obtain a creamy consistency. Season with salt and pepper.
6) Serve hot, garnished with chopped parsley and an additional sprinkling of black garlic
