Our Tequilera Master, Ana Maria Romero, one of the most respected and award-winning tequila authorities in Mexico, prefers quality over speed and has perfected Mijenta's distinctive flavor profile through a meticulous slow process and traditional methods.
They range from the selection of silky ripe agaves from the best plots, to the rich fermentation of slow-cooked agaves and the delicate distillation in discontinuous stills.
Everything is carefully calibrated to create Mijenta's signature aromatic palette, from the precise cuts in the heads and tails to the carefully controlled temperatures in the evaporation and condensation process.
To give Mijenta a differentiated character, it is not filtered.
Tasting Notes:
To the eye: bright and transparent with a powerful body.
Nose: Intense aromas of cooked agave, vanilla and caramel enhanced by slow cooking, and floral and fruity notes of melon and peach. An incredibly generous and rounded finish.
On the palate: rich flavors of cooked agave, vanilla, fresh fruit and spices such as cinnamon.
