Ponti Balsamic Vinegar of Modena is the result of the slow maturation of high quality Ponti wine vinegar and grape must cooked and concentrated in vats, barrels and barriques of different woods and for different periods depending on the recipes. Our finest PGI Balsamic Vinegars of Modena mature in barriques of three different essences, which each give particular characteristics to the vinegar: oak a gentle and vanilla scent, chestnut the aromatic roughness of tannin and cherry the sweet aroma of fruit. The barriques are kept at natural temperature in the vinegar cellar in order to take full advantage of the climatic variations of the seasons. The heat favors the fermentation and the concentration, the cold the sedimentation. 1 lt glass bottle.
