Characteristics of the vineyard
Exposure: southeast and east.
Soil: The soil derives from the disintegration of the stratified marl and sandstone present in the subsoil of the DOC Collio area and is basically clayey in the higher areas with finer components in the foothills areas.
Microclimate: mild temperatures with rainy springs, hot and dry summers.
Training system: Guyot and Sylvoz Vine density: 4000-7000 vines/hectare
Age of the vineyards: 10-45 years Vinification,
Fermentation: harvested during the early hours of the morning, after a soft pressing, the fermentation takes place in stainless steel vats for about 10 days with temperature control. A small variable percentage of selected grapes can spend a few hours of cold maceration before pressing.
Refinement: after fermentation, the wine rests on the fine lees throughout the winter until bottling in spring.
Serving temperature 10-12°C
Food pairing Savory appetizers, risottos and omelettes with asparagus, grilled or fried fish and shellfish, white meats.
