FARMHOUSE OF THE GIGLIO PETIT MANSENG
BACKGROUND
Grape variety from Jurançon, an area close to the French Pyrenees-Atlantiques. Superior form of Gros Manseng, it has particularly small berries with a thick skin, which produce small quantities of must and can remain on the plant until late autumn, so as to concentrate the sugar with a drying process called "passerillage" in French. The interest in the potential of this variety is continuously increasing in our Agro Pontino, where it was born in Le Ferriere (Latina) about 50 km south of Rome.
GRAPES AND VINIFICATION
100% Petit Manseng from well ripe grapes which, however, retain an excellent acidity content which guarantees maximum varietal expression.
White vinification with short cold maceration (7-8° C.) for 10-12 hours.
Very slow and soft pressing, with the utmost respect for the fruit, followed by natural static settling of the must at 14–16° C.. Spontaneous start of fermentation (to enhance the varietal and aromatic characteristics) with inoculation of yeasts on the second day of fermentation. After 10 days, once the fermentation is complete (which took place at 18-20° C.), the new wine is racked off and cooled to avoid malolactic fermentation.
Bottling around March/April, after a long stay on the lees.
ORGANOLEPTIC EXAMINATION
Brilliant straw yellow colour, very intense, aromatic and spicy bouquet; fresh taste, very mineral, savory, with excellent structure.
