Cervaro della Sala was one of the first Italian white wines to undergo malolactic fermentation and refinement in barriques, with the first vintage in 1985.

A Unique and Elegant Style

Cervaro della Sala owes its name to the Monaldeschi della Cervara, a historic family that owned Castello della Sala in the 16th century. This iconic white wine was born from the desire to create a label capable of withstanding long refinements, a goal achieved thanks to the intuition of Renzo Cotarella, who produced the first vintage in 1985. Innovative and refined, Cervaro della Sala was among the first Italian whites to undergo malolactic fermentation and refinement in barrique, a choice that defined its unique and elegant style.

The Antinori family has been dedicated to wine production for more than six hundred years: since 1385, when Giovanni di Piero Antinori became part of the Florentine Winemakers' Guild.
