Langhe D.O.C. Rossese Bianco 2021
The manual harvest of the grapes takes place in the last ten days of September. This is a late harvest, carried out when most of the grapes are affected by botrytis cinerea (noble rot). After pressing and destemming, the must undergoes a short skin maceration in the press. Fermentation takes place partly in steel tanks at a controlled temperature and partly in oak barrels at cellar temperature (16-20 °C). At the end of the alcoholic fermentation, the wine is left sur lies (where malolactic fermentation takes place) with frequent batonage until September of the following year, when decanting takes place before bottling.
GRAPE VARIETY: Rossese 100%. The vine, originally from the Cinque Terre, is white and tends to ripen towards the end of September-beginning of October. Arrived in the Langhe at the end of the nineteenth century, it was recovered in old Monforte vineyards in the mid-1970s.
PRODUCTION AREA: Municipality of Monforte d'Alba – Castelletto sub-area. Helvetian type soil (emerged seabed, formed in the late Miocene, 10-12 million years ago) of medium texture (silt, clay and sand in balanced percentages), rich in mineral salts and active limestone.
FOOD COMBINATIONS: Excellent with shellfish, fish in general, but also with medium-aged cheeses.
